You can usually find details of the refrigerant type and amount (usually by weight) on a plate attached to whatever equipment you have, Compressors? Air conditioning? As for amounts lost there shouldn't normally be any significant loss. If refrigerant needs to be replenished you'll need some specialist advice on which ones you can and can't use. Have a look here.

Contact BOC the type of gas you use to Top up will depend on what is in the system. you will get a list of compatable types from them, there are other suppliers also eg NRW etc.
A lot of it is to do with the type of lubricant in the compressor and the types of valves in the systems. Old systems can be run on new HFC's blends without changing any of these this others will require replacement of valves different lubricant and sometime, different compressor, expansion valves, receivers, capillaries and driers. Also try ACRIB they have loads of info and any training provider of the C&G or CITB Refrigerant Gas handling and brazing. Some links below
