Would anyone have a template for a legal reigter for UK and Northern Ireland they would be willing to share with me?

You don't need a template.  Just start a spreadsheet and give the columns headings of

- Title of legislation

- Where applicable

- Summary of requirements

- How requirements are fulfilled

- Date and findings of last compliance check
