To which can be added other common construction site terms such as Pig's Ear and Horse's A*se.
Seriously, shear legs are two spars/poles secured together at the top from which some kind of lifting block or pulley is suspended. I don't know about cow's tails, but I have heard the term in relation to rock climbing tackle.

The term cow's tails seems to be more used in caving than in construction, but to quote

"'Cows tails' are the name given to short lengths of dynamic rope, which are tied to the sit harness (on the D-ring at the centre strong point). They form approximately 1 metre long tails, at the ends of which are tied figure 8 knots and a screwgate carabiner attached. The cow tails are used to connect the operative to his back-up device, his hand ascender, tools, for by passing deviations etc."

Such terms are becoming increasingly common and one can now find reference to harnesses with single, double and treble tailed in some method statements.
