Has anyone every considered / or have a copy of a risk assessment specifically aimed at safety officers (in the wild) as we carry out visits in the muck and bullets which is the big wide world of safety away from work bases.

No
The idea that you can assess people as a stand alone assessment flys in the face of common sense.
Risk assessment is activity driven with interfaces with people.

A Safety Adviser from the BBC gave a talk to the London Metropolitan branch of IOSH on this subject about 18 months ago. He described controls for risks in 'civil disturbance' and war situations.
I can't recall his name; if you are unable to trace him, the chair or secretary of the Met branch should be able to put you in touch.

Have something that may be of use, it is for persons going to an unknown location.
As we at Grove Services (UK) Limited are involved with many aspects we are asked for this review sheet.
Send e-mail and we will provide you with information.
