Special question to all the food 'experts' out there and specifically on the design and construction of food premises and equipment.I have got a copy of the The Food Hygiene (England) Regulations 2006 but am struggling to find anything in them relating to design and construction of premises. If they are not in theb Regs where can I find details please?

Hello Malcolm,
Try The Food Safety Act 1990 as it is the
"mother" Act for all Food Safety and is
applicable to all food premises. ... it covers
general requirements for the design, construction
and operation of food premises.

Have a look at the chilled food association website, there are specific publications relating to design of premises,etc and will give you the guidelines required to satisfy hygiene and safety standards

I think the CDM regs will also have some info, such as toilets cannot lead directly onto and from food preperation, handling, consuming area and so forth but am not 100% sure or where abouts. Im sure one of our esteemed colleagues here can point you in the right direction

Food Safety Act is like the H&S Act in that it is an enabling act, Food Hygine Regulations discuss how to maintain Hygienic food premises and processes (HACCP etc).
CDM deals with H&S During construction and Demo - could be construted as designers duties to design out hazards and risks
Building regs is the one I believe or as an architect or the LA

Hi you might consider talking to an EHO at the Environmental Health dept of your local council. As the enforcing agency re food safety they should be up to spead on this.

You need to look in Regulation (EC) 852/2004 Annex 2 for the actual regs themsleves, but they are very general, Things like..
All articles, fittings and equipment with which food comes into contact are to be installed in such a manner as to allow adequate cleaning of the equipment and the surrounding area.
Regulation (EC) 852/2004 Annex 2 Chapter 5 Para 1(d)
The layout, design, construction, siting and size of food premises are to permit good food hygiene practices, including protection against contamination and, in particular, pest control.
Regulation (EC) 852/2004 Annex 2 Chapter 1 Para 2(c)
As stated above, best to speak to your local EH department about this one. The requirements haven't changed hugely from the old Food Safety (General Food Hygiene) Regulations 1995, but they have changed.
