When unloading high cube containers what type of equipment is necessary as I understand that the boxes are stacked up to 11 feet high any suggestions as this is an area I am new to.

I'd start off by carrying out a Manual Handling Assessment of the task. Obviously consider the load (dimensions, mass, handholds, stability, ability to grip etc.), the work environment (temperature, safe access, lighting, ventilation), work rates (rest, quanitity handled, time etc) persons (how tall, physical restrictions, pregnancy).
Of course you main concern may be how to access the highest boxes, in which case you need to look at it from a work at height point of view and provide a suitable work platform for the persons to reach the upper levels, especially whilst at the absolute rear (doors) of the container.
You could always ask the supplier to palletise the boxes so you could use mechanical means e.g a forklift accessing the container via ramp or loading dock.

Ask the supplier to palletise?
High Cubes can potentially carry in excess of 1000 cartons. How many hours would it take to empty by hand, palletising as you go? 3 hours? 4? More? How much is this going to cost you in labour charges? Pre-palletised deliveries should reduce unloading time by more than 50%. How much is this going to save you in labour costs? Eliminates manual handling during the unloading process as well. How much extra will the supplier charge for pre-palletised delivery? Also consider the cost of purchasing/maintaining suitable access equipment. Me thinks cost savings will emerge. Don't ask the supplier to palletise, INSIST.
Nuff said.
