I can recommend undertaking both the AS and A level Psychology courses. I've undertaken the AS and am now studying the A level in evening classes.
I found almost all of the AS useful and relevent as a safety practicioner, and pretty much all of the A level too so far.
I did both of these courses in the local college for a fairly small amount of money compared to some commercially available courses out there, and would say that even the AS as a standalone wil give you valuble insights in basic psychological theories and applications.
How you tie them into safety is up to you but you will certainly end up with a good store of knowledge to draw upon.

For a starter, try to get hold of "Human Safety & Risk Management" by A. Ian Glendon & Eugene F. McKenna published by Chapman & Hall.
This book considers major psychological and organisational issues within the framework of health and safety at work and the management of risk, extending applied knowledge from psychology and related disciplines.

I agree with some of the responses above, the HSE's information is good. If you are interested in stress try "The Stress Myth" by Serge Doublet. It isn't the best written book in the world but it does give some valid arguments against calling all forms of anxiety stress.
As for what you have asked for, I you may find some of the free articles on www.psychscience.co.uk worthwhile. A blatant plug for the site...
When I am back from my current trip I will check my references and send you a list of some useful books.
As I always say when I post on this site - I am a psychologist based in the Midlands and by virtue of that I obviously have services to sell; but the info mentioned above is free and, in the case of the web site, is added to frequently.

You can down load material on safety culture from Dominic Cooper on behaviouralsafety.com.
The Affective Safety Management book from IIRSM is really good
The books from BST authored by Thomas Krause are good.
