Hi,
I have recently been advised that an Appointed Person first aider can only cover up to 5 persons on site.
Once more than 5 persons are on site an Approved First Aider is required.
Is this true?

Your source of information may be correct.
Check out INDG 214 (First aid at Work) which you should be able to find on Google.
There is a table in there which provides guidance on the numbers of appointed persons and first aiders that you should have for different categories of risk. This does confirm that for a site of up to 5 you need an appointed person and for numbers over that you need a first aider.
However, this is guidance only, and the specific risk of each site would need to be taken into account.
However, despite this guidance, I personally would always look to have a first aider at hand, how ever many people were around.

as already stated risk assess
in some gangs of ~4-5 people all staff are first aiders. this because of the risk present - in other areas we only have 1 FA [ plus back up!] for to ~50 staff

Any and all construction works involving more than 5 people then requiring a fully qualified First Aider? I'll stick with my intitial judgement thanks - I like sensible H&S.

As already mentioned risk assessment is the key. You should consider factors such as:
Location and attendance times of emergency services
How hazardous the workplace is
Numbers of staff
Processes used at site

If one appointed person can cover 5 people on site can we allow apointed persons to cover multiples of 5 persons, i.e.14 on site = 3 appointed persons?

Not according to the guidance - over 5 you need a first aider.
However, as had been mentioned already, this is a guideline only and risk assessment of the situation is the key.
