Posted By clairel Phone up FSA and get a copy of SFBB, for free. That will tell you everything you need for a basic audit of a kitchen.

Posted By Bill Elliott cfraser If it is a basic audit you are wishing to undertake other responders have indicated some very useful sites to assist you. However, if it is likely you are going to be required to audit food safety - beware this is a very complex subject and you should not be doing this if, as you say, this is not your area of expertise. As you indicate that industrial kitchens are involved, the potential for things to go badly wrong and adversly affect a large number of people eg food poisoning, serious illness and death, it is not something you should enter into lightly. Posted By Ron Hunter Numerous free (& very informative) guidance publications in the CAIS series available free from the HSE website, HSG35 priced publication would be invaluable when considering machinery hazards in kitchens. None of this will give you a comprehensive H&S Audit checklist though If you're only concerns are HACCP, then you could try a "google" on 'assured safe catering'.
