I head up HS & E for the UK element of a global ICT provider. I'm responsible for pulling together a cohesive management plan to address the issue of swine flu and associated BCM/Contingency plans.
I've looked at NHS guidance regarding a risk assessed based approach to the management of this issue and I'm starting to address environmental, organisational and individual behaviour factors associated with the source, transmission and recipient stages of the virus.
I would be very interested to know what other H&S professionals are doing within their own workplace to address this risk.

We are looking into the issue in a big way especially so as we have been given projections that are suoppposed to be sound that a very larg amount of any given workforce may be affected at a concentrated time
If this information is correct the implications speak for themselves
Get in touch with your local emergency planning department of your council to get some advice

We've simply reviewed our absence and cover procedures (including a skills matrix) and our procedures for regular communication between departments. And of course told people to stay at home if they have flu :-)
