Got the first one coming up soon, and I havent got a scooby doo how these things work.

Hiya,
If you have a copy of the 18001 or 14001 standard, section 4.6 details what inputs are required (i.e. what needs to be discussed) and also what outputs are required (i.e. what needs to be recorded and communicated - usually through minutes).
I probably can't list them all, due to copyright, but common items to be discussed are:
Internal Audit Results Communication from interested parties System performance (KPI's etc.) Incident / acident investigations etc. Status and progress of agreed corrective / preventative actions The previous meeting's minutes and actions Changs to the business, structure, law etc. Reccomendations for areas for improvement to the system
Outputs would include targets, new policies / procedures, performance data etc.
