Hi,
I'm trying to locate data on what temperature oils/greases/fats from cooking processes will ignite and catch fire. This is relating to some ongoing discussions with our maintenance team regarding increasing clean/replacement frequencies of extraction flues on oven and also deep cleaning of heavily comtaminated floor surfaces above the ovens identifed on recent inspections. I have no doubt there is a significant fire hazard within these areas and it needs immediate action, however i'm trying to locate actual data on temperatures required for ignition.
Any help would be greatly appreciated!

It is a "reasonably" reliable resource being a University Research Paper.
I've not looked at it though.
Your material supplier should be able to advise this as they should have it for their manufacturing process, if you are talking about self/auto ignition temperatures?

Depends on the specific oils. Clean veg oil has an auto-ignition temp of around 400 degrees C but dirty, contaminated and dusty deposits will not need much encouragement to ignite, particularly within a duct or on a kitchen surface. Also hard to extinguish leading to extensive damage.
