The transportation of food is covered in Regulation (ec)852/2004 on the hygiene of food stuffs. It is in chapter 4 and basically states that any vehicle used to transport food stuffs are to be kept clean, maintained in good repair and in such condition to protect foodstuffs from contamination and where necessary be designed and constructed from a material which will permit adequate cleaning and/or disinfection. You also need to consider how you are going to ensure temperature control if required which is covered in the food hygiene (england, wales etc) regs 2006

You mention transporting sealed cooked and uncooked foods being transported together but not the types of food. It is possible to contaminate food wrappings. Therefore if the packaging/wrapper of the uncooked foods at source, or during handling/transit, could become contaminated then a source of contamination potentially exists.
