Hope this is not a 'without checking on the internet' question. But consider the usual 'noxious' fumes, contact with chemicals, hot liquids, electricity, and general trip hazards in workplace.
Also check for past accidents (via internet) to see what happened and what were contributory factors.
Check with H&SE if its a defined process for registration.
Finally, check if you need to register this process with SEPA/EPA/Water authorities for discahrges and emissions.
Sorry, been a while since I visited forum and doing it quickly, so hopefully you get your answers...

Control of Substances Hazardous to Health Regulations (COSHH) - for the potential health effects of the chemicals.
Electricity at Work Regulations - I would guess there is further technical guidance available specific to galvanising if you look for it - a BS standard?
PPE Regs
Workplace / Welfare Regs

Avoid a roof leak above the zinc tank as this creates some spectacular unwanted effects.

Don't hot-dip sealed boxes - they can also lead to spectacular unwanted effects.
The steelwork needs to be designed with hot-dip in mind so that the detailing incorporates proper venting and draining arrangements.
