Standard roller doors (not a fire shutter) - should they close when the Fire alarm activates?

Could you give some more information. Type of building, work done there, etc.

Seen them in use on a roller shutter to a servery / kitchen, but beware also seen them activate and trap a large pan left underneath - caused a lot of damage to the shutter, but could have been a person - so make sure adequate controls are in place to prevent trapping, if you choose to install.
As previously said though it does depend on the work being carried out and fire risk / spread beyond the roller door.

If the roller door is required to compartmentate the building/complex to prevent the fire spreading to give enough time for people to escape then yes, but then it also need to be a fire rated. Roller doors that do shut cannot obstruct egress and cannot be the emergency exit route that is why you often see an adjacent normal fire door.
A roller door for external access generally no. This is assuming there is no explosive or highly flammable processes and materials are stored.
