Hello Ian The HSE's site is okay as a site for general H&S risks in retail, but I would suggest talking to the local retail radio partnership to get a better idea about dealing with violence - this is the biggest risk these days A tried and tested system is linking up a town centre's shops with radios to connect big and small stores together, preferably join it to town centre CCTV and also have an intelligence system to record and pass on details of known active local criminals. This system of self help has been operating for over 15 years and does work, it will be actively supported by the local police. I'm afraid I don't have any off the shelf presentations, been a while since I was involved in it. However you may find that the local town / city centre partnership does.
