Hi Ron, I have an interview for this position, I presume it is a person who is employed by the company they are to audit,they will be involved in the technical side of the food management system, making sure that due diligence is being adhered to,traceability data,HACCP etc. Thank you, the company produces fresh food stuffs,salads.

Thanks for that Latchy. Not my area, but if you want to listen to an expert discussing the topic of food production risk assessment (40 minutes) (albeit a Canadian perspective) there's this on Youtube:

I'm not sure if I'm too late to help, so fingers crossed I'm not! Without knowing any specific details of the operation there's a few bits of info: You might want to have a look at the following document: http://archive.food.gov....pt_health/pdf/catsec.pdf Although it's primarily aimed at catering the principles will likely be the same for food manufacturing. The FSA also have produced an Safer Food Better Business pack, which provides a template for businesses in producing a Food Safety Management System, check it out if your not already familiar with it: http://www.food.gov.uk/m...dfs/sfbbfullpack0109.pdf Again it's for caterers but the principles will be the same. It's likely that a food manufacturer will have their own Food Safety Management System, but it will be largely similar to the SFBB pack. There's also a huge amount of guidance here: http://www.food.gov.uk/foodindustry/guidancenotes/ Most of it probably wont be relevant, but some of it might so it might be worth checking it out.
