evening .
does anyone know off or can point me in the direction of information/studies regarding the dangers of using enameled cook ware on serveries in food outlets .
currently looking into a situation where a customer while getting food out of an enameled casserole dish struck the lip of the casserole dish ( to dislogde something on the serving spoon ) this fairly light strike resulted in a shard (1.5 cm long of enamel ) flying off and getting into the food .
on inspection the majority of the enamel cook/serving dishes have chips of enamel out of them .
i have asked that they are all removed as i see this as a potential route for shards/chips of enamel to enter the food chain .
any advice appriciated
