Will someone please point me in the right direction of any documents that give recommended (or minimum) distances between desks, gangways, pedestrian routes etc. I'm presuming it may be a BS publication but would be grateful for any guidance that may be out there.

You could try the Workplace Health, Safety & Welfare Regs / Approved Code of Practice. Regulations 10 and 11 relate to room space requirements and workstations.

Normal internal door is 75 cm and I would not go much below this for normal movement when positioning furniture

I think this was the subject of another thread but I have looked back and can't find it. In general and from memory the the dimentions mentioned were 900mm between the back of one desk and the front of another to allow for the chair to pushed back enough for comfortable access. If two people are back to back 1800mm should be allowed between the desks. It also talked about walkway widths for main and secondary routes, etc.

I believe that I contributed to the previous thread mentioned by Ian where I indicated the occupational space requirements that can be found in "The Journal Metric Handbook" produced by the Royal Institute of British Architects. This forms the basis for standards applied by architects in the UK.
In addition to the measurements mentioned by Ian,others include aisle widths of 750mm for a "minor" office; 900mm for a "normal" office & 1500mm for a "major" office.
In addition, the Fire Precautions Act 1971 also has dimensions for door widths & exit routes.
