Could someone please point me to information sources on the dangers of UV inks in printing presses.
I couldn't see anything relevant when I searched.

Is there no pertinent information on the HSE site: www.hse.gov.uk/printing? You could contact the British Coatings Federation; their website is www.coatings.org.uk.
It is many years since I was involved in the printing industry but UV inks used to be sensitisers and, because they were acrylic based, they were very smelly.

You could try a publication from the Printing Industry Advisory Committee:

also try the BPIF - either their website
www.britishprint.com - they have a health and safety bit - or just give them a ring - they have offices acros the UK, if you are a printer you could be a member of the federation and access their range of services.
