Small amounts, banked regularly, collected at different times, different days, in daylight, various people collecting each time, personal safety training, insure their vehicles for business use, in pairs if risks warrant it i.e large amounts or very remote areas. Encourage employees to note surroundings and ensure they are not being followed etc. park as close to the meter as possible each time. Put it in bags that do not look like cash is in it (i.e not carriers as coins are obvious). Regular contact with base (start and finish times), mobile phones, panic alarms.

Use a security firm if needed.
