Is there any evidence/literature to show the severity of risk caused by radiation from servers?

Are we talking electrical radiation, and computer servers. If so, servers are nothing special and emit exactly the same electromagnetic radiation as pretty much all other electrical appliances - toasters, hairdryers, computers, videos etc etc.

Or do you mean the X-ray radiation from CRT based monitors attached to servers? If so, servers are nothing special and their displays emit exactly the same electromagnetic radiation as all other computer displays.

Or are we talking some other kind of server?
