What is the reason for using flint guns for lighting up gas torches? What property makes it more safe than lighters or match sticks?

Nah, I think it is more traditional than anything to do with safety. Except that they do tend to be a bit longer than your average lighter. stops the thumb being scorched.
Some welders have a prejudice against lighters - stories of explosions in the breast pocket causing heart attacks - disproved a long time ago - try putting a welding torch on a gas lighter - it doesn't explode, just gives a short jet of flame. I've tried it myself. Fun Fun fun.
Try a kitchen stove lighter - about 6 to 8 inches long, no chance of setting light to your fingers.

The real reasons are simple.
Flint guns don't burst into flame under any circumstances;
Flint guns will not create a spark without you cause the flint and striker to pass across one another;
Flint guns don't carry on burning after they're struck;
Flint guns don't carry on sparking after the flint has passed over the striker;
Flint guns don't need fuel;
Flint guns aren't affected by damp, sitting on etc;
Flint guns aren't affected by changes in oxy levels or pressure.
