Can anyone advise me where I can source food safe training (not the Elementary or Intermediate Food Hygiene courses) that mainly relate to regulations and national standards i.e. not for those at the cold face of the food industry, but for those that need a background in the regulatory side.

It would be much appreciated.

Try your local Council Environmental Health Department. They are bound to have publications on general requirements for food hygiene without going into detailed specifics.

Best bet is the advanced food hygiene certificate - its a CIEH approved course that takes 2 weeks full time or 3 months day release. It covers the legislation, HACCP and practical elements of food hygiene practice.

Unfortunately knowledge of front line techniques is needed to be able to verify implementation of management standards.
