Check out the Charity Commission site; there are leaflets on H & S responsibilities.

HSE produce books and guidance packs including video's entitled Health and Safety for voluntary and charity organisations.

A good starting point is HSG192, 'Charity and Voluntary Workers; their H&S at work' from HSE books, about £12 I think,
