I have to introduce a policy on the chocking of vehicles over 7.5 tons while they are undergoing a security check. I would appreciate any assistance regarding guidelines or procedures for safe chocking of vehicles.

If this is a regular exercise get an angle iron bar with two chocks either end where one will slide towards the other locking into place. The bar itself must not touch the floor or it could stop the chocks working properly.
The chocks dimensions should fit the dimensions of the wheels tyres (approx) and hold the weight of the vehicle without collapsing.
SSoW needs completing for safe use of, inspection regime of, safe storage of, training of etc etc.
Between a safety equipment supplier (chocks), a decent fabricator (angle iron assembly) and you (safety bod paperwork etc) you should create something 'fit for purpose.'
