Disclaimers are not worth the paper they are written on.
What you need to ensure is that when you hire any bicycle out then safety checks have been carried out and the customer signs to say that you have gone through the obvious checks with them and they are receiving the bicycle in good order.

You can say that "..... you do so at your own risk", however the duty holder may not contract out of his own negligence.
