About a year ago I briefly worked with HACCP. This topic has now re surfaced.

I need to get myself up to speed on this topic.

Any ideas as to next best move.

Garry - check out the Food Standards Agency website - http://www.food.gov.uk/ - and type HACCP in their search engine. This should give you all you need to know to refresh yourself.
