hygiene at self-service buffet style restaurants

While on holiday last week I was concerned at the level of food hygiene in the holiday village we were staying in. I had a great time, and would love to go back, but only if I was satisfied about the food hygiene aspects.
This holiday village was in Spain but run by a British company, with well over 1,000 guests (over half of them children) using the self-service buffet style restaurant three times a day. There were no sneeze guards, the serving tongues were short(about 8inches) and there were no hand sanitizers provided at the entrance.
I don't work in the catering or hospitality sectors so I am not familiar with the regulations or current requirements. Could anyone point me in the direction of a source of current best practice in high-volume self service restaurnats to combat norovirus and H1N1 swine flu?

Best advice-
Only eat it if it is cooked and has been kept HOT not warm.
Avoid salads and cold meats etc at all costs

Would suggest you look at the Food Standards Agency site as well as professional bodies such as the Institution of Envoronmental Health Officers.

I suggest you visit the CODEX Alimentarius website that provides international food safety guidelines that are used by comapnies across the globe when implementing food safety management systems such as ISO22000.

Alternatively you can use the forum on the international food safety and quality network www.ifsqn.com where you can post this question with a number of food safety professionals.

Hi, in all things food related or infection good hygiene practice is the key along with good food management.. temperature control etc. Part of my duties includes kitchen inspections..had to complete advanced food hygiene training..got to say has made me very wary of buffet food.. regards hotels in Spain or any where else.. the resident has little or no control over most of this.. thus bottom line if it really concerns you don't do it..go self catering make your own or eat in restaurants that cook food from scratch as you wait.

Thanks to all respondents ... it's always great to get help and comments from the IOSH community!
I have a vague memory of a big fuss many moons ago about Pizza Hut salad bars and similar buffet areas - were there any changes in the UK after that? - such as longer tongues and sneeze guards? I also think that I remember something about cold rice being one of the worst offenders???

if you got ill Best advice
dont go to spain and if you do have health insurance
i stay in England get the wife to cook
i know her food hygiene is spot on and have had no probs what so ever and thats after 12 years of 3 meals a day
i once went to egypt had a kebab off a street vender and it nearly killed me ---learnt my lesson 4 days in hospital
never had a kebab off a street vendor in india got one in a hotel was ok
you eat the meal you take your chance
check beforehand
if there are cockroaches in the bar you can bet there in the kitchen
