Go to Google. Put in "swine flu policy", restrict your answers to "UK sites only" (or not if you are not in the UK!) and pick from among the many options according to what business you are in.
You know your busines best so you are the best judge of what is needed.

There's a heap of stuff in the Sept issue of HSW - including a checklist that will guide you towards a policy - but there's no universal cut-n-paste solution as it depends on your job, staff and premises as to what the risks may be, and what procedures you can implement without disrupting things too much.
Policies for a restaurant kitchen or hospital are totally different from those for a delivery company or a group of blokes digging a hole.
