I have been asked for help and ideas to formulate a risk assessment plan for a quality colleagues dissertation. It asks to investigate what type of activities which should be included and what quantitive and qualitive analyses can be used to evalute the exposure to risk during a project. As this is not my area of work I wonder if anyone has any ideas?

This is a very big question, and needs quite a bit of thought. A start can be found by looking at http://www.mindtools.com...s/article/newTMC_07.htm; this gives a fairly exhaustive list of top level risk categories.
But that really is only a start.
Qualititative techniques could include FMEA or a modified HAZOPS, Delphi analysis, or Stepladder discussions . For quantitative techniques two I would think of Cash Flow at Risk, Net Present Value and just plain simple plucking numbers out of the air and sticking them in a matrix.
It's a big subject, there is more information including a freely downloadable and widely accepted Risk Management Standard on the IRM website (www.theirm.org), and there is also an Association for Project Management which seems to have a lot of resources on its website,
