Afternoon all,
wondered if someone can help me with these two issues?
What software is best used for producing emergency plans indicatiing locations and type of extinguishers, means of escape, fire alarms etc etc?
I need to source premises boxes to contain said plans and other documents etc. any ideas?

It depends where you're getting the base plans from - if they're scans, just use an image-editor like Photoshop. If they're available in CAD/vector or you're drawing them in from scratch, Illustrator or AutoCAD would be an option as the documents can be imported as-is and scaled to any size. There are loads of free/cheap CAD programs out there, such as http://www.cadstd.com/lite.html
You can lay hold of fire symbols by downloading an icon font that contains them. Dafont has a free font called "hazard" that should suffice: http://www.dafont.com/hazard.font
For premises boxes, try http://www.gerdatechnology.co.uk
