Could anyone offer advise on what controls and checks we should be carrying out for a hot food canteen set up on our site. Outside company offering the service for us.

Are you thinking about food safety controls? if so, make sure they have an adequate Hazard Analysis Critical Control Points (HACCP) system in place and that they actually control & monitor their CCP's such as temperature control. You would also ensure they have food handling hygiene training etc. With a H&S hat on, treat them as any other contractor.
