Catering staff at my workplace are complaining about eye and throat irritation and think that it is caused by food frying on the open griddle, bacon,burgers etc. Does anybody know of a similar problem or could suggest a course of investigative action. The griddle is housed under a hood and extraction system.

Ben,
Whilst not involved in catering ops. You could get the extraction system checked. Maybe the filters are dirty or clogged or the extraction rate isn't enough for the level of fumes etc. it is being expected to cope with.
Also HSE Books has leaflets etc relating to catering and kitchens that may be useful.
(Many of these are free)

You could try changing your cooking fat/oil.
I have also heard of a similar reaction when non-stick surfaces/vessels are overheated.
I would personally be looking elsewhere
