Does anyone have any thoughts on what I now understand is a legal requirement, for a sign to be put next to an extinguisher, with an image of a fire extinguisher and basically saying ‘This is a Fire Extinguisher’.
Is this true?
If so why?
Was there felt to be a danger that someone might mistake the extinguisher for something else?

The response we've had from our Fire Service is that these signs should be used where the location of the fire fighting equipment is not obvious or easily visible, such as where it is located behind a pillar, or behind a screen (for example fire hoses). It has also been recommended to use them where they may be tampered with or removed to allow easy identification of where they should be.

Nope, its not true.
Signs should be used where the extinguisher itself is not readily visible, for example if its hung on a wall and something further down a corridor obscures sight of it.
A lot of fire companies are trying to sell signs saying you need one for each extinguisher location but its not true.
Whether its useful or not to do anyway is another debate. Some signs give clearer instructions on what the extinguisher is to be used for than may be readily visible on the extinguisher itself. Personally I think its overkill and don't do it but you makes yer own mind up on that one, bearing in mind any training staff have had, etc.

Just read up on this (work avoidance..) and now I'm confused as well...
I'm convinced you don't need a sign if the extinguisher is clearly visible, but the Signs and Signals Regulations, Schedule 1 Part IV does say "Fire fighting equipment must be identified by using a specific colour for the equipment AND placing a location signboard.."
Been looking through the relevant British Standards but can't see anything in that.
