What is the equivalent of IOSH for the above and could anyone email me direct if they can give some advice on the above.

Think its REHIS or English equivalent (Environemental Health Officer's professional body).

Food Standards Agency is who to contact and their document Cooksafe (which might be Scottish name) is the one for guidance

Try the CIEH website and look for information on EHOs/Food Safety Officers.

Along with the CIEH there is also the Royal Institute of Public Health (RIPH). They do a lot of training courses for food hygiene along with public health issues (including nutrition). They have various levels of training from foundation up to advanced. I am a member of this institution and have found them useful in the past.
